Gazpacho Soup


4 Servings as a starter

Gazpacho is a Spanish cold soup from Andalucía.

It is a “drinkable salad.”


4 large fresh tomatoes, peeled and seeded

4 cloves of garlic, minced

1 large cucumber, peeled, seeded and chopped

1 large green pepper, seeded and chopped

2 tablespoons good local olive oil

1 tablespoon lemon juice or vinegar to taste

Small piece of rustic bread, crust removed, broken into pieces


Put all chopped ingredients into a blender and blend well.

Add salt to taste.
